Oftentimes as kids, we watch our parents cook dinner for us every night. I was fortunate that my parents allowed me to help in the kitchen. I would have to say that my dad’s favorite food group was steak. That was the beginning of my experience cooking on the grill.
As the years went on, I would call my parents for the recipes that I grew up with and cook for friends and family. When my son graduated from high school, we had a graduation party for him. We cooked pulled pork and smoked wings. People loved it. They said, “you need to open a restaurant.”
That’s not what I did. In fact, my best friend and I were looking to purchase a donut shop. Everyone said that it was a bad decision. Then there was the “a-ha” moment. We were at 3rd Wave Brewing Company in Delmar, DE and there was no food to eat with their great beer.
I asked the owner if they would be interested in having me sell food on the weekends. My wife and I started selling pulled pork sandwiches, smoked wings, baked beans, slaw, and mac and cheese from beneath a pop up tent. We called ourselves In Your Backyard BarBQ. After two summers of setting up tents and tables every weekend, we purchased a 24’ food concession trailer.
The new food trailer allowed us to expand our menu. We added crab cakes, fried rockfish, jumbo clam strips, specialty hamburgers, hand cut fries and our fried mac and cheese egg rolls. After several years of running the food trailer, an opportunity came to open our first brick and mortar location in The Pavilion at 1400 South in Salisbury, MD. Keep in mind, my wife and I had full time jobs and were just doing this as a side thing.
In June of 2016, I became a restaurant entrepreneur. Smokin’ BBQ Grille in Salisbury, MD was born. This could only have happened with the love and support of my wife Michelle. She has spent countless hours making sauces and cleaning dishes and working when I needed her.
